CAVA
The story begins, as all the best ones do, in a small place with a great winemaking tradition: a land of Catalan farmers with a desire to discover and investigate. The other key factor was three main grape varieties: Macabeu, Xarel·lo and Parellada, a trilogy which defined and differentiated this sparkling wine, later named Cava.

Types of Cava
The sugar content, or “dosage”, in the licor de expedición (expedition liqueur) is what determines the final profile of the Cava. In general terms, this liqueur is a mix of base wine and sugar, but beyond this common starting point, a multitude of possible variations exists.
This dosage determines the style or type of Cava, from the driest (without added sugar), Brut Nature, to Dulce - the sweetest. Plus, of course, all the other styles (Extra Brut, Brut, Extra Seco, Seco, Semi Seco), which add versatility to this drink, and therefore wider gastronomic potential in terms of the fine art of pairing.
Categories
Sampling these categories of Cava, you can discover a whole world of taste and technical mastery - the decision that decrees the aging of each bottle in the cava, or cellar. The aging time is the factor that dictates the category: Cava de Guarda, with a minimum of 9 months; Cava de Guarda Superior, with reposo of either more than 18 months (Reserva), 30 months (Gran Reserva), or the highly prestigious Cava de Paraje Calificado, aged for more than 36 months.
The Zones
The origins of Cava lie in the winemaking area of Penedés, especially in the town of San Sadurní d’Anoia and its surroundings, which has earned the title of Cava capital. However, for historical reasons, Cava can also be made in certain other towns and regions. There are four main areas of the D.O. (Designation of Origin) Cava to highlight.

In 2020, with the aim of tracing even more clearly the origin of Cava, sub-zones have been approved. This way, the provenance of the product can be precisely pinpointed, thereby enriching the experience of each glass of Cava: you can taste the notes added by the soil and the richness of the local microclimate where the wine was made.
