Citric Gin

Tasting Note

In the glass, a citric gin appears impeccably transparent and brilliant, catching the light with almost electric, lively reflections. Upon nosing, it unveils a joyful, intensely luminous bouquet—a sudden burst of freshly grated citrus peels, orange blossom, and a balsamic undertone where juniper softly supports vibrant notes of Capri lemon, lime leaves, and sweet, ripe mandarin. On the palate, it unleashes a vibrant, crisp, and exceptionally juicy entry; a citrus-forward caress that brings texture and beautiful verticality to the mouth, where bright acidity and clean spirit warmth walk hand in hand, leading into an incredibly long, clean, and snappy finish that begs for another sip.

Breaking Pairings

Its natural acidity and zesty fruit profile make citric gin a brilliant and playful choice to cut through rich fats or elevate delicate dishes:

- Sea Bass Ceviche with leche de tigre or Salmon Tartare: The explosive citrus notes in the glass meld symbiotically with the fresh, raw fish juices, effortlessly slicing through the fat while amplifying the ocean brine.

- Fresh Burrata dressed with basil oil and toasted pine nuts: A thrilling textural and flavor contrast; the sweet, rich creaminess of the burrata cheese is cut clean by the gin's electric crispness, resetting the palate.

- White Chocolate Bonbons with lemon and a hint of mint (from Casa Amatller): The sweet, milky indulgence of white chocolate finds its ultimate foil in the sharp, zesty citric edge of the spirit, elevating the dessert to a sublime finale.
