Brandy

Tasting Note

In the glass, this brandy displays a mature beauty, featuring colors that evolve from deep old gold to dark amber and intense mahogany, leaving slow, dense legs that reveal its remarkable concentration. Upon swirling, it unfolds a warm and deeply profound aromatic symphony, where hints of toasted nuts, raisins, dried figs, and apricots merge gracefully with notes of toasted oak, vanilla, rich toffee, and subtle whispers of tobacco and fine leather. On the palate, it feels truly majestic and velvety; a dense entry packed with character coats the mouth with flavors of honey, dark cocoa, and a highly refined spicy undertone, leading into an everlasting, warm, and deep finish that leaves an unforgettable impression.

Breaking Pairings

Forget about saving it solely as an after-dinner digestif. Brandy is a thrilling gastronomic companion. We dare you to try these three unconventional pairings:

- Aged Parmigiano Reggiano (30+ months): The crunchy salt crystals and savory depth of the cheese find a magical counterpoint in the spirit's natural warmth and rich texture.

- Game Pâté or rustic country terrine: The rich fats and robust, earthy flavors of the meat are beautifully lifted and cut by the structure and oak influence of the brandy.

- Dark chocolate chunks with Himalayan pink salt (from Casa Amatller): A premium match where the salt crystals snap the cocoa's bitterness, allowing the sherry-cask memory of the brandy to bloom.
