Taleia white wine by Castell d'Encús is a true marvel of high-altitude viticulture, masterfully conceived by the prestigious winemaker Raül Bobet in the Lleida Pyrenees, under DO Costers del Segre. This cult white wine is built upon Sauvignon Blanc, cultivated at nearly 1,000 meters above sea level. Its true essence lies in an extraordinary and globally unique winemaking process: a significant part of its fermentation takes place inside 12th-century stone vats hand-carved directly into the rock by medieval monks. Carefully aged on its fine lees in French oak barrels and stainless steel tanks, the wine achieves an unparalleled structural depth, mineral purity, and crisp alpine acidity. Taleia is a legendary, vertical, and deep collectible white wine, designed to captivate sophisticated wine enthusiasts and star in high-end homemade pairings.
In the glass, it presents itself with an outstanding crystalline elegance, showcasing a beautiful bright pale yellow color with subtle golden and greenish hues that speak of its mountain purity. On the nose, it is deep, complex, and constantly evolving, intertwining delicate white fruit notes like crisp apple and winter pear with citrus nuances of grapefruit peel. Quickly, hints of fine spices, herbal infusions such as chamomile, Pyrenean forest floor, and tomato leaf emerge, all wrapped in a captivating mineral and smoky sensation that honors its stone fermentation. On the palate, the entry is powerful, sharp, and deeply refreshing. Its journey across the mouth is vertical, fluid, yet surprisingly dense and structured thanks to the Sémillon weight and meticulous fine lees work. It stands out for a sharp, electric, and lively acidity that sustains the wine with impressive architecture. The finish is remarkably long, vibrant, and strongly mineral, leaving a clean, cold aftertaste highly characteristic of high-altitude terroirs.
A premium luxury pairing easily arranged at home. Taleia’s vertical alpine acidity perfectly cuts through the dense creaminess of the cheese, while the nutty notes of the Comté and the mineral, smoky undertones of the medieval stone vat blend into absolute perfection.
A daring and humble homemade bite. Rich, oily blue fish greatly appreciates a white wine with the structural backbone and razor-sharp acidity of Taleia. The wine's citrus clarity instantly cleanses the palate after each savory bite.
The quintessential green and creamy harmony. The herbal and leafy notes of Taleia's Sauvignon Blanc harmonize naturally with the green asparagus. At the same time, the wine's rich mid-palate and solid stride effortlessly complement the creamy weight of the rice.
