The white wine Vins Nonell Blanc de Noirs is a true winemaking gem created in collaboration with Celler Collbaix under DO Pla de Bages. Paying tribute to the landscape, flora, and people of Central Catalonia, this white wine is crafted through the white vinification of red Cabernet Sauvignon grapes, gently pressed to extract pure free-run juice without skin contact. The result is a highly sophisticated Blanc de Noirs, combining the structural strength of a noble red grape with surprising freshness and a velvety texture.
Tasting Note
Shining in the glass with a pale straw-yellow color hints of subtle copper glints that reveal its red grape origins, it opens on the nose with a deep and unconventional aromatic complexity. Ripe white fruit notes like juicy pear and baked apple mingle with hints of wild red berries such as redcurrants and wild strawberries, wrapped in wild herbs and subtle pastry undertones. On the palate, it impresses with broadness and structural firmness; it enters smoothly with a velvety lees texture seamlessly balanced by crisp, electric acidity, leading into a long, mineral, and highly refined finish.
