The white wine Còsmic by Parés Baltà is one of the purest and most vibrant expressions of biodynamic viticulture in Penedès. Grown at over 600 meters elevation in the region's highest mountain plots, this organic white wine under DO Penedès blends the earthy strength of Xarel·lo with the delicate aromatic touch of Sauvignon Blanc. Modern, honest, and deeply respectful of its natural surroundings, it undergoes brief skin contact and lees aging to extract maximum energy, crispness, and terroir character.
Tasting Note
In the glass, it shines with a pale straw-yellow hue, luminous and crystal clear, accented by youthful greenish flashes. On the nose, it unleashes an intense aromatic bouquet where white flowers, passion fruit, and elderflower mingle with ripe stone fruit like apricot, juicy pear, and subtle wild herb nuances. The palate is deeply fresh, agile, and silky; its body displays an inviting volume from regular lees stirring, seamlessly balanced by electrifying acidity that leads into a dry, perfumed, and remarkably long-lasting finish.
