Exibis La Rasa is a red wine born in the high-altitude vineyards of Navàs, farmed under strict biodynamic standards and an absolute devotion to the ecosystem. This wine shines for its honesty and finesse, steering clear of heavy extractions to present a fresh, clean version of Bages. Its true core flows from a beautifully balanced blend: the historic signature of Mandó, delivering floral elegance and lightness, intertwined with the expressive fruit of Black Grenache and the delicate backbone of Cabernet Sauvignon. Fermented purely with native yeasts, La Rasa behaves as a liquid mosaic reflecting the mineral chalky-clay soils and the singular cool microclimate of the northern part of the region.
In the glass, it displays a bright cherry-red robe of medium intensity, shimmering with clean, lively ruby highlights that immediately invite you to taste. As you bring it closer to the nose, it opens charmingly with an array of very fresh aromas where crunchy wild red berries take center stage—highlighting fresh raspberries, wild strawberries, and redcurrants, accompanied by subtle hints of pomegranate. Swiftly, the wine evolves to reveal its Mediterranean soul, unfolding notes of forest floor such as wild rosemary, thyme, violet petals, and a very fine touch of sweet bell pepper from the Cabernet. On the palate, the entry is smooth, remarkably fresh, and fluid. The journey through the mouth is agile and velvety, steered by fine, polished tannins that integrate flawlessly with a lively, natural acidity that lends a delightful vertical drive. The finish is intensely savory, elegant, and balsamic, leaving a clean, fruity aftertaste backed by a chalky mineral memory that extends the experience in a highly refreshing way.
The stunning fluidity, crisp acidity, and balsamic profile of Exibis La Rasa make it an exceptionally versatile wine, perfect for dishes full of nuances and contrasts:
Bluefin Tuna Tataki with a Sesame Crust and Wild Raspberry Reduction: The crisp acidity of the Mandó and Grenache cuts cleanly through the fat of the premium bluefin tuna, while the wine's crunchy red-berry notes create a beautiful mirror pairing with the raspberry reduction, showing spectacular balance on the tongue.
Crispy Boneless Pork Trotters with Seasonal Wild Mushrooms: A gelatinous, intense dish that demands a fluid red. La Rasa's fine tannins balance the rich texture of the pork trotters, while the dish's earthy mushroom and forest flavors intertwine elegantly with the mineral, chalky depth of the Exibis.
