Profile
Fresh, Floral & Balsamic
Molt Més Que Paraules Mandó is much more than a standard red wine; it is a profound act of historical rescue and raw passion for Central Catalonia's unique terroir. Mandó, a nearly extinct grape variety deeply bound to the identity of Pla de Bages, is reborn in this bottle with shocking delicacy. Shunning heavy, over-extracted red trends, the winemakers implement a highly respectful approach—combining classic oak casks with traditional clay amphorae to lock in the true purity of the fruit. The result is a red of haunting fineness, showing the magnificent past of local winemaking shaped for modern palates.
In the glass, it surprises with a brilliant, medium-bodied bright cherry hue, flashing a luminous clarity that invites you to dive right in. The nose is a celebration of subtle seduction, staying clear of heavy wood tones to offer a burst of crisp red fruits like wild cherries and fresh raspberries. This fruitiness seamlessly weaves into fragrant floral violet notes and a gorgeous balsamic backdrop of rosemary, wild thyme, and damp earth. On the palate, it behaves like pure silk—nimble, vertical, and incredibly sophisticated. Driven by a vibrant, underlying acidity and fine, flawlessly integrated tannins, its mineral core and crunchy red fruit flavors ring true into a long, beautifully fresh, and satisfyingly herbal finish.
Thanks to its beautiful acidity, elegance, and lightness, this Mandó red defies classic matching rules and shines with dishes that would normally crush a red wine:
Seared Oily Fish & Grills: Dare to go beyond meats and pair this red with a seared bluefin tuna tataki encrusted with sesame seeds and a wild berry reduction, or a grilled wild sea bass. The wine's structural freshness effortlessly cuts through the rich oils of the fish, striking a brilliant harmony.
Local Textural Delicacies: Try it alongside a traditional plate of crispy boneless pig's trotters cooked with sweet prunes and pine nuts, or a board of local Bages cured meats and semi-cured artisanal cheeses.
