The red wine Ramón Bilbao Gran Reserva is a true masterpiece shaped by time and infinite patience in the DOCa Rioja. Standing proud as the ultimate symbol of consistency from Bodegas Ramón Bilbao, it is crafted exclusively during outstanding vintages from old-vine Tempranillo, rounded out with small portions of Graciano and Mazuelo. Through an uncompromising aging process of 30 months in American oak barrels followed by a minimum of 36 months in the bottle, this wine achieves sublime sophistication. It is an immortal classic, available in limited production, designed to grace the finest tables or be cellared as an authentic collector's gem.
In the glass, it displays an elegant, deep ruby-red color with a remarkably clean medium-high robe, beautifully crowned by seductive brick-red and iodized rim tones that reflect its long and noble rest in the cellar. On the nose, it offers a true festival of velvety perfumes that constantly evolve as it breathes: it opens with a symphony of liquorice-soaked black fruits, dried prunes, and blueberry compote, quickly making way for rich notes of tobacco leaf, truffle, cloves, cedar wood, and cigar boxes. Subtle undertones of fine leather and frankincense round out a captivating aromatic profile. Upon entering the palate, it caresses the mouth with an incredibly noble and velvety texture; its tannins feel like pure silk, fully integrated through its long years of cellaring. The Graciano variety keeps the flame of an impeccable acidity alive, lending it a surprising freshness for its age, and guiding the experience toward an eternal, elegantly balsamic finish full of roasted nuances, dark cocoa, and sweet spices that linger for minutes in the memory.
A match of pure culinary craftsmanship. The rich, gelatinous texture of the trotter and the deep aromatic profile of the truffle demand the structure of a Gran Reserva. The wine's silky tannins respect the tenderness of the meat, while its crisp acidity effortlessly cleanses the palate after each bite.
A harmony of deep autumn tones. The delicate yet firm meat of the quail is enhanced by the rich sweetness of the figs and Port, a combination that mirrors perfectly the dark liquorice fruits, tobacco, and baking spices developed by the wine over its extensive cellaring history.
A daring breakdown of standard pairing guidelines. The poached cod provides an incredibly smooth texture that, combined with the earthy porcini notes and the salty crunch of Iberian ham, calls for a complex yet velvety red. The fine wood characteristics of the Gran Reserva blend sublimely with the smoky tones of the dish.
