Dido is one of the most acclaimed, iconic, and poetic red wines from DO Montsant, created by winemaking pioneers Sara Pérez and René Barbier Jr. (Venus La Universal). Grown organically on decomposed granite soils (sauló) in Falset, this blend—led by Red Grenache alongside Syrah, Cabernet Sauvignon, and Merlot—is aged in oak vats, barrels, and clay amphorae. The result is a vibrant, fluid red wine offering incredible mineral freshness and profound elegance.
In the glass, it glows with a bright ruby-red color of medium density and translucent edges. The nose reveals an elegant, earthy bouquet filled with juicy wild red berries—raspberries, wild strawberries, and red cherries—complemented by violet florals, pink peppercorns, Mediterranean wild thyme, and a distinct mineral backdrop of granite rock and clay. On the palate, it is supple, flowing, and deeply energetic; entering smoothly before revealing an agile yet flavorful body framed by silky tannins and electric acidity. The finish is long, fresh, fragrant, and profoundly connected to its terroir.
Fresh & savory match. Vibrant granite-grown Grenache acidity cuts through rich pork fat effortlessly without adding weight.
Earthy synergy. Floral aromas and granite minerality pair seamlessly with earthy beetroot and savory duck textures.
Refined contrast. Creamy goat cheese profiles match the crisp fruitiness and mineral lift of Dido for an exquisite finish.
