The organic white wine Fonoll by historic Torre de Veguer winery is a pure and authentic expression of the limestone soil of Massís del Garraf in DO Penedès. Named after wild fennel ('fonoll') growing alongside coastal vineyards, this wine blends indigenous Xarel·lo with the rare Xarel·lo Vermell (Red Xarel·lo). Crafted through eco-friendly viticulture, it showcases a deeply Mediterranean, mineral, and herb-infused character with electric freshness.
In the glass, it presents a clear pale yellow color with subtle copper-pink hints derived from the skin of Xarel·lo Vermell. The nose opens with a delicate, deeply Mediterranean bouquet dominated by wild fennel, thyme blossom, and fresh grass, coupled with crisp mountain apple, pear, and citrus zest. On the palate, it delivers energy and refinement; a light, vibrant entry guided by seamless acidity supports a subtle saline and chalky texture. The finish is fluid, aromatic, and persistent, leaving lingering herbal and mineral echoes reminiscent of Garraf limestone.
Botanical marine match. Aniseed wine notes mirror fresh fennel while vibrant acidity cuts through smoked oily fish richness.
Crisp saline contrast. Lightness and minerality from Xarel·lo Vermell elevate melon sweetness while balancing savory ham.
Landscape synergy. Mediterranean herbal undertones pair seamlessly with wild thyme and smooth, creamy ricotta cheese.
