Discover a completely new dimension of rosé wines with Les Nones Rosat, a sophisticated and characterful creation born at the historic Ca n'Estella estate. This wine breaks away from the stereotypes of light, simple rosés through an ambitious winemaking approach: crafted entirely as a single-variety Merlot and subjected to 5 months of barrel aging. This time in oak is not intended to mask the fruit, but rather to bestow a magnificent structure, creaminess, and high-level complexity upon the spirit. Carrying the prestigious DO Penedès appellation, Les Nones Rosat is the ultimate choice for lovers of gastronomic rosés—those seeking the vibrant crispness of red berries paired with the weight, body, and personality that only noble oak can confer.
In the glass, Les Nones Rosat captivates immediately with its elegant, intense raspberry-pink hue catching onion-skin highlights and ruby undertones, showing a brilliant and rich visual density. Upon nosing, it unveils a deep, mature aromatic dimension where notes of wild strawberries, ripe raspberries, and red cherries merge harmoniously with whispers of sweet pastry, blonde tobacco leaf, a touch of vanilla, and a subtly spiced background that reveals its careful oak aging. On the palate, the wine is expansive, creamy, and surprisingly structured; a velvety, full-bodied entry coats the mouth with rich fruit sensations and bakery-like echoes, beautifully counterbalanced by a crisp, sustained acidity that provides excellent freshness, leading into a long, elegant, and intensely balsamic finish that redefines the rosé category.
The structure, volume, and complexity provided by its 5 months in barrel transform this aged Merlot rosé into an absolute chameleon at the dining table:
- Wild Salmon Tataki with a pistachio crust and a red berry reduction: The rich, healthy oils of the fish find balance in the wine's acidity, while the oak notes and the nut crust create a delicious smoky interplay.
- Grilled Duck Magret with a wild blueberry sauce: A classic combination where the sturdy structure of the Merlot holds up the rich meat, and the barrel-aging notes melt beautifully into the charred flavors of the grill.
- Crisp Puff Pastry Mille-Feuille with crème pâtissière, fresh figs, and a touch of wild thyme: The crunchy texture of the pastry and the creaminess of the custard merge with the wine’s full body, while the fresh fruit and herbal hint connect directly with the balsamic spine of this aged Merlot.
