Finca Río Negro 5.º Año represents the ultimate pinnacle of time, patience, and meticulous selection within a unique high-altitude terroir. Crafted in Cogolludo at nearly one thousand meters of altitude, this collector's item is exclusively born from selected barrels where the Tempranillo and Cabernet Sauvignon blend achieves a sublime harmony. True to its name, this premium Vino de Pago undergoes a thorough five-year aging process, split between wise aging in French oak barrels and an extended rest in the bottle. The result is a mature, aristocratic, and profound red wine, perfectly tailored for those seeking the ultimate expression of complexity, longevity, and pure elegance.
In the glass, it displays an intensely deep, dark cherry red color, framed by a texturized rim where brick and garnet highlights confidently reveal its majestic and patient bottle evolution. The nose unfolds with extraordinary refinement, offering a deep symphony of fully evolved aromas. Initially, it surprises with notes of very mature stewed black fruits, such as plums and dried figs, which quickly intertwine with memories of pipe tobacco, fine leather, cedar wood, and cashmere. As it breathes, hints of exotic spices like nutmeg and cloves come forward, along with a mineral backdrop that evokes wet earth and subtle touches of pure dark chocolate. On the palate, the entry is majestic, bold, and sumptuous. The mouthfeel is absolute velvet; the tannins, beautifully polished and rounded by the passage of time, are fully melted into a silky texture that gracefully cloaks an imposing structure. Surprisingly, despite its long aging, the wine keeps alive the crisp high-altitude acidity signature of the estate, bringing brightness, balance, and infinite finesse. Balsamic undertones, noble oak roasts, and seasoned fruit flavors linger almost endlessly. The finish rewards the palate with memorable persistence and distinction, leaving a classy, smoky, and spicy aftertaste.
A wine of this magnitude demands a meat with great personality. The firm, lean texture of venison pairs flawlessly with the silky tannins of the 5.º Año. The wine's mineral and wet earth characters create a perfect mirror with the black truffle, while the sloes add a subtle acidity that connects with the mountain freshness.
An incredibly captivating high-end culinary pairing. The noble fat of the duck melts before the structure of Cabernet and Tempranillo. The wine's aging notes, which evoke roasted coffee and pure cocoa, are spectacularly enhanced by the components of the sauce, creating a deep, long-lasting harmony.
The crumbly texture and tyrosine crystals of a 36+ month Parmigiano require a complex, velvety wine. The saline and Umami flavors of the cheese find balance with the wine's maturity, while the balsamic touch of the aceto finds its perfect echo in the noble background of this great red.
