Finca Río Negro Selección is the definitive emblem and true reflection of a wild, unique terroir in Spain. Crafted in Cogolludo, at the foothills of the Sierra de Ayllón mountains at nearly one thousand meters of altitude, this extraordinary red wine comes from a masterly blend dominated by Tempranillo, beautifully paired with Syrah, Merlot, and Cabernet Sauvignon. Shaped by an extreme mountain climate and meticulous aging in French and American oak barrels, it has become an undeniable icon that proudly holds the exclusive DOP Vino de Pago classification. A high-altitude red wine that stands out for its astonishing freshness, an imposing structure, and an aromatic richness designed to fully captivate palates looking for authenticity and elegance in every single glass.
In the glass, it presents an intensely deep cherry red color, beautifully dark, clean, and brilliant, enhanced by lovely garnet highlights along the rim that show its fantastic structure and careful aging. The nose reveals a deep, expressive perfume of great complexity, where crisp aromas of ripe red and black fruits, such as wild blackberries, sweet cherries, and dark plums, take the lead. Instantly, the fine oak wood integrates seamlessly, bringing forward rich background notes that evoke black pepper, cloves, roasted coffee beans, cocoa, and a subtle touch of licorice. This entire aromatic profile is elegantly framed by a balsamic and mineral character, distinctive of the vineyard's extreme altitude. On the palate, the entry is powerful, sumptuous, and deeply captivating. The mouthfeel is broad and velvety, supported by mature, round, and firm tannins that build an impeccable skeleton. A lively, crisp acidity stands out exceptionally well, refreshing the entire wine, lengthening its journey, and providing a sublime verticality with a cold Atlantic profile. Ripe fruit flavors melt together with memories of sweet spices and smoky oak accents. The finish is incredibly long, savory, and remarkably persistent, leaving a balsamic, smoky aftertaste of absolute distinction.
The powerful structure and balsamic profile of this Vino de Pago are perfect for elegant wild game meats. The firm tannins of the wine blend beautifully with the bird's lean texture, while the background coffee and cocoa characters create a flawless mirror with the dark chocolate sauce.
A daring pairing focused on texture and smoke. The meaty character of flame-seared octopus and the smoked touch of Pimentón de la Vera find their ideal counterpoint in the spicy notes and vertical acidity of Finca Río Negro, effortlessly cleansing the palate of the rich potato cream.
The intense saline and sharp bite of a fully cured cheese requires the depth of an outstanding red wine. Tempranillo and Cabernet provide the necessary body, while the high-altitude acidity cuts through the dairy richness, leaving a luscious fruity sensation at the very end.
