The red wine Ramón Bilbao Selección de la Familia is the most intimate, exclusive, and personal expression within the DOCa Rioja. Crafted as a single-varietal wine from 100% Tempranillo harvested from old high-altitude vineyard plots in Rioja Alta, this wine showcases the noblest character of Spain's signature grape. Aged for 20 months in French and American oak barrels followed by bottle resting, the result is an extraordinarily complex signature red where oak elegance and pure ripe fruit unite in unforgettable harmony.
In the glass, it presents a majestic deep garnet-red color with a high robe, accented by clean brick-red rim highlights that reveal its noble, elegant maturation. On the nose, it unfolds as a true symphony of complex, layered aromas: bursting immediately with notes of ripe dark fruits like dried prunes, wild blackberries, and cherries in liqueur, wrapped in seductive tones of pure cocoa, roasted coffee beans, leaf tobacco, and sweet vanilla. As the wine breathes, subtle balsamic and spicy nuances emerge, bringing forward black pepper, nutmeg, beeswax, and a delicate graphite mineral undertone. On the palate, it delivers a stately, flawlessly balanced presence; its flow feels like pure velvet, supported by silky, ultrafine Tempranillo tannins and a firm yet beautifully polished structure. Crisp acidity preserves its vitality and elegance, guiding the mouth toward an amazingly long, persistent, and aristocratic finish filled with roasted notes, sweet spices, and dark fruit liqueur memories.
A match of pure gastronomic richness. The deep, tender wild boar meat and aromatic black truffle notes intertwine seamlessly with oak complexity and spicy Tempranillo undertones, while the wine's acidity balances the rich creaminess of the béchamel.
A surprising high-fusion pairing. Charred octopus textures, sweet potato richness, and cocoa touches directly mirror the roasted coffee, toast, and vanilla notes of this signature wine, creating a memorable interplay of flavors without overpowering the palate.
Reinterpreting classic game pairing elegance. Lean, noble venison calls for a structured wine with polished tannins. Ripe fruit compote and warm spice notes from this signature Tempranillo align perfectly with sweet blueberry and fig flavors.
