Pazo de Señorans White Wine is widely regarded as one of the true icons of DO Rías Baixas and a global benchmark for the Albariño grape. Crafted in the famous Val do Salnés subzone from old vine pergolas planted on granitic soils, this wine undergoes a minimum of five months of fine-lees aging in stainless steel tanks. The result is a refined, age-worthy, and structured white wine showcasing true Atlantic elegance.
In the glass, it shines with a bright straw-yellow hue highlighted by green reflections and a rich, subtle viscosity. The nose reveals an exceptionally complex and elegant bouquet, featuring ripe stone fruits like vine peach combined with elderflower, candied lemon peel, subtle herbs, and a distinctive granitic-saline mineral edge. On the palate, it is full-bodied, rich, and mouth-coating; fine-lees aging provides a silky texture that is masterfully balanced by bright citrus acidity, carrying the palate toward a long, lingering, and beautifully refined saline finish.
High-precision harmony. The complexity and silky texture of Pazo de Señorans elevate delicate raw fish while its saline backbone pairs with soy notes.
Atlantic & exotic synergy. Palate weight supports rich lobster meat and creamy avocado while electric acidity keeps the pairing refreshing.
Elegant land & sea contrast. Structure granted by fine-lees aging allows this Albariño to accompany white meats and rich sauces effortlessy.
