AT Roca Pedregar is the most sublime, iconic, and purist expression of the unique vineyard that gives it its name: a singular 3-hectare plot planted in 1982 over limestone marl soils in Costers de l'Ordal. Certified under the strict Corpinnat quality collective, this organic sparkling wine is an authentic signature creation made mostly as a Blanc de Noirs from Garnatxa Negra under low intervention guidelines. Base-fermented in oak foudres followed by a monumental bottle-aging of over 60 months on the lees, it is released with no sugar added as a bone-dry Brut Nature of sheer complexity, structure, and Mediterranean salinity.
In the glass, it exhibits supreme elegance with its characteristic "partridge-eye" color, an incredibly subtle pale pink with copper and salmon glints, accompanied by a remarkably fine bead forming elegant, slow-evolving rosaries. The nose reveals itself as shockingly complex, deep, and alluring; from the very first moment, neat notes of wild red berries and forest fruits provided by the Garnatxa captivate the senses, seamlessly interweaving with ripe stone fruit aromas like vineyard peach and soft citrus nuances. As it breathes, an array of creamy undertones unfolds, displaying fine pastry, fresh butter, a hint of saffron, and floral sparks of native Mediterranean herbs. On the palate, it is pure character, structure, and verticality. The entry is lively, backed by a razor-sharp, flawlessly integrated acidity that delivers immense freshness. The mouthfeel expands beautifully, becoming wide, velvety, and fascinatingly creamy thanks to its extended lees aging. The finish is exceptionally long and dry, dominated by a stunning chalky-mineral terroir stamp and a spicy aftertaste that calls for proper celebration.
The powerful structure, vinous body, and weight of a fine oak-aged Blanc de Noirs easily hold its ground against the depth of raw red meat and spices, while its exquisite bubbles perfectly cleanse the palate after each bite.
A highly sumptuous contrast pairing. The precise Brut Nature profile and crisp vertical acidity seamlessly cut through the buttery opulence of the foie, while matching its subtle sweetness with the wine’s stone fruit and brioche notes.
This gastronomic, ultra-aged Corpinnat possesses the ideal volume, texture, and chalky-saline minerality to elevate the profound briny flavors of premium shellfish and the richness of a traditional Mediterranean sofrito.
