The Kripta Ubac is like bringing the high mountains and the shade (the "ubac" or north-facing slope) directly into the glass. This cava tells us a different story; it speaks of extreme freshness, minerality, and great patience.
Visually, it has a very clear straw color, with a cold brilliance, like winter light. The bubble, of course, is just as extraordinarily fine as its long-aged siblings, rising in delicate threads.
The nose is where the Ubac differs most. If the Bayanus was Mediterranean and warm, the Ubac is Atlantic and fresh. Extreme Purity: everything is very clean and sharp. There are no massive bakery or brioche notes; instead, we have more herbaceous and even slightly balsamic notes (like bay leaves or mint). The fruit is very subtle: green apples, water pear, almost citrusy, but with a background that recalls wet stone or morning mist. Despite its freshness, the long aging leaves a subtle trace of very light toast and almond cream.
On the palate, this is where its Brut Nature personality (with zero added sugar) is fully felt. It is an extremely dry wine. Acidity is its backbone: it is lively, tense, and vertical, like a slender mountain peak. The most prominent flavor is minerality. We sense notes of chalk, salt, and sometimes a touch of white pepper. It is a wine that cleanses the mouth and leaves a sensation of coolness. The creaminess of the bubble, though elegant, is subservient to the freshness, making the mouthfeel very light and vibrant.
The Ubac is the Kripta for lovers of extreme dryness and minerality. It is a sparkling wine that demands attention, ideal for fresh seafood or dishes with herbs, because its calling is purity and verticality.
