Cuesta del Herrero Chardonnay is an elegant white wine produced by Pago de Aylés, one of Spain's few elite wineries granted the official Vino de Pago designation. Crafted predominantly from Chardonnay grapes grown on limestone-clay soils and aged on fine lees, this wine delivers a luscious texture combined with vibrant mineral freshness and ripe fruit complexity.

Narrative Tasting Note

In the glass, it presents a luminous straw-yellow color with clear golden and greenish highlights. The nose opens with an intense bouquet of ripe stone fruit—vine peach and apricot—intertwined with delicate tropical hints of pineapple, white flowers, and candied lemon zest. With aeration, subtle notes of fresh butter, brioche, and a chalky mineral undertone emerge thanks to its lees contact. On the palate, it is mouth-filling, creamy, and textured, balanced by crisp citrus acidity that keeps it bright and energetic. The finish is long, savory, and silky with a subtle salty touch.

Groundbreaking & Mediterranean Gastronomic Pairings

Red Tuna Tataki with sesame crust and sweet mango chutney

Creamy match. The lush Chardonnay texture and ripe stone fruit flavors complement rich tuna and sweet mango notes seamlessly.

Porcini Mushroom Risotto with seared foie gras and Parmigiano flakes

Elegance in synergy. Lees contact and medium body embrace rich rice texture and foie gras untuosity while preserving crisp freshness.

Soft Goat’s Milk Cheese (Saint-Marcellin style) with citrus jam

Vibrant contrast. Bright acidity cuts through goat cheese richness while citrus nuances create a harmonious finish.
