The white wine Panzas sobre lías from Bodegas Valtravieso is a bold, gastronomic expression of DO Rueda. Crafting solely with Verdejo grapes from selected vineyards, this wine undergoes an extended aging period on its fine lees. Moving away from light commercial profiles, Panzas sobre lías focuses on depth, mouth-filling volume, and vibrant acidity that reflects Valtravieso's high-altitude terroir and honest winemaking philosophy.

Tasting Note

In the glass, it glows with an attractive straw-yellow color highlighted by green and gold glints, revealing its density and lees contact. The nose immediately impresses with high aromatic complexity where ripe white fruits like Fuji apple and juicy pear intertwine with passionfruit, pink grapefruit, and a distinct herbal background of fresh cut grass and fennel. As it opens, lees contact brings elegant hints of brioche, fresh butter, sourdough, and a subtle chalky mineral nuance. On the palate, it reveals its full power: the entry is broad, creamy, and glyceric, coating the mouth with a rich, fleshy texture. This richness remains beautifully balanced by vibrant citrus acidity that provides a lively, electric flow. The finish is long, pleasantly bitter, and refined, leaving persistent notes of aromatic herbs, ripe citrus, and sweet spice undertones.

Groundbreaking Pairings

Homemade roasted free-range chicken and foie gras cannibal with light truffle bechamel

A rich, luxurious pairing. The creamy bechamel sauce and savory poultry flavor find their match in Panzas sobre lías' body and texture, while its crisp acidity cleanses the palate after every bite.

Toasted brioche bun with confit Iberian pork, smoked chili mayo, and pickled onion

A bold, savory harmony. The tender pork and buttery brioche balance nicely with the texture and creaminess of lees aging, while Verdejo's citrus cut through the rich meat seamlessly.

Homemade boletus mushroom risotto with seared red king prawn and thyme oil

A deeply aromatic surf-and-turf connection. Sweet, briny red prawn flavors and earthy wild mushrooms complement the herbal, mineral undertones of this Rueda white wine.
