Anima Mundi Cantallops is the most personal, raw, and biodynamic project of Agustí Torelló Roca (AT Roca winery) within the DO Penedès appellation. Sourced from an old Xarel·lo vineyard planted on limestone soils in Cantallops, this white wine is crafted under low-intervention guidelines, with no added sulfites, and fermented in old oak barrels and clay amphorae. A white wine of absolute purity seeking the terroir's ancestral soul.
Tasting Note
In the glass, it shows a deep golden yellow color, bright and with slightly cloudy hints that reflect its unfiltered natural processing. The nose is immediately surprising for its immense freshness and wild, earthy complexity, showing notes of baked apple, ripe citrus peel, dried herbs, and chamomile. As it breathes, subtle touches of nuts and a heavy chalky mineral dimension unfold. On the palate, it is all volume and vertical alignment. It features a vibrant entry with a sharp, electric acidity that carries the mouthful, accompanied by a slightly velvety texture given by the clay amphora work. The finish is bone-dry, deeply saline, and leaves a gorgeous, characterful bitter edge typical of premium Xarel·lo.
