Udina white wine stands out as one of the most praised and unique creations from Fermí Bohigas, a historic estate with winemaking roots dating back to the sixteenth century. Crafted under the DO Catalunya appellation, this exceptional white wine is a true 100% Garnacha Blanca monovarietal sourced from selected plots within their Gelida estate. The soul of Udina lies in its meticulous aging on its own lees, an artisanal method that provides the wine with an advanced structural dimension, creaminess, and outstanding complexity. Far from fast-fading whites, Udina positions itself as a profound, food-friendly, and age-worthy bottle, specifically designed to delight lovers of textured Garnacha Blanca looking for body, elegance, and a solid mineral signature in every glass.
In the glass, it immediately captivates with a beautiful, bright golden-yellow color, highly brilliant and clean, showing heavy, elegant legs that anticipate its substantial structure. On the nose, it is a wine of amazing transformation and complexity, opening with elegant scents of white flowers and initial memories of crisp fresh fruit. As it breathes and evolves in the glass, the aromatic spectrum grows deep and mature, releasing spicy hints of clove and nutmeg, touches of candied orange, wild forest herbs, and a seductive backdrop of nuts like raw unroasted hazelnut. On the palate, it behaves superbly, highlighting a powerful, mature, and noble entry. Its flow across the mouth is distinctly rich, textured, creamy, and full-bodied, thanks to the undeniable contribution of its lees contact. This impressive volume remains perfectly balanced by a well-integrated acidity that firmly supports the wine. The finish shows immense persistence where minerality and a delicate hint of honey crown the aftertaste.
A match of pure texture and body. The gelatinous, rich feel of confit cod pairs masterfully with the creamy, full-bodied flow of Udina's Garnacha Blanca, while the wine's hazelnut tones and minerality enhance the earthy depth of the black truffle.
Breaking traditional meat pairing rules. The structure, power, and fourteen percent alcohol volume of this lees-aged white allow it to comfortably face the rich Iberico pork, while the spicy clove and nutmeg notes in the glass perfectly mirror the chestnut puree.
Harmony of heavy profiles. The rich duck oils and sweet pear aioli demand a white wine with great muscle and crisp balance. Udina cuts beautifully through the dish's depth, opening the path for its mature accents of candied orange and forest herbs.
