Ximénez-Spínola Delicado is an unrivaled winemaking masterpiece created by the legendary Ximénez-Spínola winery, the only house in DO Jerez-Xérès-Sherry dedicated exclusively to the Pedro Ximénez grape. This exceptional sweet wine originates directly from the traditional sun-drying process («soleo»), where fresh grapes are patiently transformed into raisins of extraordinary aromatic and sugar concentration. A pure raisin sweet wine subjected to delicate oxidative aging in American oak, defined by its aristocratic finesse, fluidity, and a masterly balance where sweetness never feels heavy.

Narrative Tasting Note

In the glass, Ximénez-Spínola Delicado glows with a deep, dark mahogany color highlighted by intense amber, copper, and old-gold reflections. The nose immediately unfolds an unmistakable, sublime aromatic symphony of sun-dried Pedro Ximénez raisins: dried figs, dried apricots, dates, and black plum jam intermingle with pure cocoa, toffee, roasted coffee, noble oak, cedarwood, and licorice nuances. On the palate, it delivers pure character, silkiness, and refinement; its entry is deeply honeyed and velvety, yet unlike heavier raisin wines, it surprises with remarkable fluidity and grace. The natural grape sweetness is counterbalanced by crisp, noble acidity that sustains the wine, culminating in an infinite, deep, and persistent finish filled with dried fruit, aged oak, and toffee echoes.

Groundbreaking & Mediterranean Gastronomic Pairings

Seared Foie Gras Tartlet with raisin sauce and Ximénez-Spínola reduction

An haute-cuisine savory match. Creamy foie gras melts into the fruit concentration and velvety texture of this natural raisin wine.

Artisanal Blue Cheeses (such as Cabrales or Valdeón) and Long-Aged Sheep Cheeses

A sweet-and-salty pairing of maximum intensity. Sharp blue cheese meets its ideal match in the honeyed, noble depth of Jerez sun-dried raisins.

80% Dark Chocolate Lava Cake with bitter orange sorbet and cinnamon

An opulent dessert pairing. Pure dark cocoa bitterness and citrus orange peel blend naturally with the wine's toffee, coffee, and raisin notes.
