Dulce de Invierno is one of the most unique, elegant, and signature creations by the renowned Javier Sanz Viticultores winery in DO Rueda. This natural sweet wine is crafted from an exclusive blend of Verdejo and Muscat grapes subjected to overripening on the vine and traditional winter rack drying. An artisanal winemaking gem that harmonizes natural sugar concentration with crisp acidity for a masterfully balanced tasting experience.

Narrative Tasting Note

In the glass, Dulce de Invierno glows with a deep golden-yellow color highlighted by light amber reflections and thick legs. The nose immediately reveals a rich, deeply inviting aromatic bouquet: apricot in syrup, dried white figs, candied orange peel, and acacia honey aromas emerge alongside ripe tropical fruits, orange blossom, toasted nuts, and Verdejo's signature herbal-citrus undertones. On the palate, it delivers a silky, broad, and unctuous entry; rich sweetness coats the mouth, yet is gracefully pierced by a lively citrus acidity that cleanses the palate and imparts remarkable lightness without ever feeling cloying. The finish is aromatic, refined, and long-lasting, filled with candied fruit, citrus, and honey notes.

Groundbreaking & Mediterranean Gastronomic Pairings

Seared Foie Gras Mousse with passion fruit jelly, lime, and toasted brioche

An haute-cuisine savory match. Rich foie gras melts into the wine's honeyed texture while crisp citrus acidity keeps the palate fresh.

Artisanal Sheep's Milk Blue Cheese, Soft Goat Cheese, or Aged Garrotxa Cheese

A sublime sweet-and-salty pairing. Rich cheese intensity finds its match in the honeyed, citrusy, and aromatic profile of this winter sweet wine.

Classic Lemon Meringue Pie or Apricot Tatin with toasted pine nuts

A fresh fruit dessert match. Apricot and candied orange peel notes naturally elevate fruit pastry acidity and creaminess.
