Immortalis Priorat is a wine that surprises with its youth, having only spent 4 months aging in French oak barrels. It's not a Priorat to cellar for 10 years, but rather one to enjoy right now, with all its strength and expressiveness. The wood doesn't hide the fruit; it accompanies it with discretion.
On the nose, it's intense and complex. Aromas of ripe black fruit, like blackberry and cherry, are dominant, along with a very characteristic mineral touch from the llicorella (Priorat's slate soil), reminiscent of graphite or wet stone. The contribution of the oak is felt in subtle notes of vanilla, cocoa, and a hint of sweet spices that are perfectly integrated.
On the palate, the entry is powerful and concentrated, with a great structure. The tannins are present but are fine and elegant, not at all harsh. The fruit is the star again, accompanied by mineral notes and an acidity that provides freshness and balance. The wood makes its presence known with a spicy and lightly toasted touch that blends with the fruit flavors. The finish is long and persistent, with an aftertaste that combines the mineral character of the terroir with the sweetness of the ripe fruit.
In summary, the Immortalis Priorat is a wine that already shows the greatness of the Priorat DOCa from a young age. It's a vibrant, flavorful wine with a lot of character, perfectly balancing the power of Garnacha and Cariñena with the minerality of the llicorella and the subtle touch of wood. It's ideal for pairing with grilled meats, roasted lamb, game stews, or hard cheeses.
