The legendary Cava Martín Vintage is a true collector's masterpiece born from the silence and absolute rigor of the underground cellars of Conde de Valicourt, in Sant Sadurní d'Anoia. This extraordinary Gran Reserva defies time through an exceptionally long aging process of over 66 months, crowned by a rare method: 12 months of additional vertical bottle maturation. This final standing rest—without direct contact with the neck-lees—allows the wine to settle statically, resulting in absolute aromatic precision and an incredibly regal finesse, making this sparkling wine one of the purest expressions in the region.
In the glass, it immediately captivates with its brilliance and the extreme delicacy of its heritage, displaying a noble, deep golden-yellow color highlighted by very clean flashes of old gold, while a microscopic and almost unperturbed stream of bubbles rises slowly, testifying to a perfect integration achieved over nearly six years of darkness. The nose is of outstanding definition; thanks to its vertical cellaring, the aromas display stunning clarity and sharpness, where highly ripe white fruit and candied orange peel fuse with deep notes of noble autolysis, such as buttered brioche, toasted hazelnuts, pastry cream, and a balsamic, mineral touch reminiscent of the damp cellar stone. On the palate, it is pure refinement and mathematical precision. The entry is velvety, almost creamy, yet the acidity remains vibrant, electric, and flawlessly integrated, providing a sublime verticality that stylizes the entire wine. The mouthfeel is broad, rich in nuances of toasted nuts and fine bakery, guiding towards an eternal finish of extreme fineness, marked by a distinct saline aftertaste and a highly distinguished smoky memory.
The silky texture of the dough and the richness of the duck find their perfect counterpoint in the vibrant bubbles of Martín Vintage. The wine's acidity cuts through the meat's noble fat, while aging notes of almond and brioche beautifully embrace the sauce's sweet edge.
