Cava Alsina Sardà Mas aged in oak barrels is an oenological jewel, a cava that combines the elegance of tradition with the complexity imparted by wood, offering a unique and memorable sensory experience.
This Cava Alsina Sardà Mas is a singular and refined expression, the result of a careful selection of base wines that have rested and evolved with ageing in oak barrels. This distinctive process imparts a unique complexity and aromatic depth, elevating its elegance to a new level.
On the eye, it presents a bright and deep golden colour, with reflections that may evoke amber or toasted bread hues, suggesting its ageing and evolution. The bubbles are fine, persistent, and well-integrated, forming a delicate and constant crown.
On the nose, the barrel ageing manifests with a complex and enveloping aromatic richness. Initially, notes of ripe white fruit, such as apple and pear, are perceived, which merge with delicate hints of dried fruit, like almond and hazelnut. The oak contributes subtle spicy notes, such as vanilla and clove, as well as light toasted nuances and even a touch of brioche, a result of the long ageing in the bottle.
On the palate, this cava reveals itself to be structured and full-bodied, with an elegant entry and a balanced acidity that gives it freshness. The aromatic complexity of the nose is repeated on the palate, with the notes of ripe fruit, dried fruit, and the contributions of the oak integrated harmoniously. The texture is smooth and creamy, with a long and persistent finish, leaving a complex and sophisticated aromatic memory.
The use of base wines aged in oak barrels gives this Cava Alsina Sardà Mas a distinctive personality and greater complexity, differentiating it from cavas made with more traditional methods. This care and dedication in the selection and production translate into a high-end cava, ideal for enjoying on special occasions and with pairings that demand character.
This barrel-aged cava is an excellent accompaniment to dishes made with poultry, fatty baked fish with creamy sauces, aged cheeses, and even dishes with mushrooms and truffle. Its complexity also makes it a magnificent cava to enjoy on its own, during a quiet evening.
